I am surprised that there is no such topic here (or am I just plainly blind?). While I was visiting Europe with my family, we've stopped at an interesting chocolate-shop in the Austrian Alps and then in Venice (we also visited very interesting glass workshop, but that's another story) and after that experience, I've not only tried to make my own chocolate sweets (actually with some degree of success, except for chocolate ice cream, which took ages to make and was somehow unsatisfying), but not a real chocolate. So I've googled this forum and also found this jaybanks.ca/vancouver-blog/2013/02/25/top-chocolatiers-vancouver/ and I am keen to check it out. I was even thinking about some kind of chocolate making training sessions, if such thing even exists in Vancouver. Do you have a similar experience when you've started? Or perhaps do you have stories to share about how you took up chocolate-making, or probably about some great local chocolatiers? Share your thoughts!

About 2 years ago, I started melting chocolate and adding fruit and roasted nuts to it, basically making 'nut bark', then I started making truffles, as well as turkish delight and marshmallows. I recently got the premier wonder grinder and am gonna try making chocolate with that. I really became aware of how good chocolate can be when I tried the Amano bars a few years ago. After trying alot of premium bars, the Amano Dos Rios is still my favorite.
