Hey All, I'm in the late stages of finalizing the recipe for my chocolate truffles and I've run into a bit of a wall. I want all the chocolate I use to be 100% organic and fair trade, but I can't find an organic/fair trade option for the decoration on the truffles (see attached photo). The red coating in the picture is Merckens Red Melting Caps, but they contain artificial colors and flavors. The only other alternative I can think of would be to mix white chocolate and beet/tomato powder to get that same color/texture. Haven't tried it yet. Anyone have any experience with this? Any suggestions would be much appreciated. Thanks!

I'm speaking from zero experience, but if I were trying it I'd just buy organic food coloring (such as www.maggiesnaturals.com/, you could perhaps just replicate them as they list ingredients), with white chocolate or just cocoa butter. I've spoken to a truffle maker who uses cocoa butter + food coloring for "flat" decorations, such as painting colors on with a brush, or dipping. Seems like it would work for drizzling as well, no?

Thanks for the information! I'll definitely try the organic food coloring route. I also never thought about "flat" decorations (I'm still pretty new to this). I'm excited to start experimenting.

Just as a quick note as I'm not seeing any mention of this; you cant use regular food coloring for cocoabutter, it should be the powdered kind otherwise you'll have an unusable mess on your hands using an alcohol/water/other liquid based solution. Even using something relatively oil based, such as Propelene Glycol or Glycerin would soften the cocoabutter and potentially make it so that it wont set.
