My friend, and hopefully future business partner, and I made our first batch of chocolate last night. There was a very acidic taste to the finished product and everything that I have read has lead me to believe this is because it wasn't conched enough. Not really surprising given that we were using a tiny little mortar and pestle for this step... From what I've read this is definitely insufficient, so, being the poor college kids that we are, we're on the search for someone selling a USED melanger. We're in SC so somewhere close by would be awesome, but if the price is right we might be able to afford some shipping costs too. Also, if you know of anything else that might help us get rid of the super acidic taste in our chocolate we would love to have some advice. Thanks!

I'll second cheebs on that recommendation. On the back of John's post that cheeb's linked, I decided to try one and have made 3 batches of chocolate in the past 4 weeks - milk, dark and white - and haven't had any issues.

Thanks a lot, Cheebs for that recommendation. I think I might check it out. Seems like everyone has pretty good things to say about it. Anyone else ever used one?

A little update: we ended up purchasing the Premier Wonder Grinder and so far it's working like a champ! We started on our first batch with this grinder last night (a 70% dark with beans and sugar being the only ingredients) and it's been running now for almost 12 hours and the chocolate is tasting great so far! We decided to use the machine for everything an skip the champion. It performed better than I thought it would. Not like I really have anything to compare it to because we've never used a Santha, but my inexperienced eyes and tongue tell me everything is going great. Thanks for your help, guys!
