So, my employer is throwing in the towel and we're getting the boot soon. I've yet to start looking earnestly for a job, mainly because I want the severance and also because I'm on "hold" for termination in case a second stage of handover is required that will extend my contract to early 2012 rather than the week before christmas like everyone else. The severance + my vacation payout is enough that if I watch my expenses, I should be fine for awhile. So I was thinking, why not go work for a Chocolate Making facility and see how it's managed, what work is involved, etc? I could then use that knowledge to start my own small batch, artisan chocolate shop. I already make small batches, but I think it would be a good way to get some hands on. Any thoughts on where I should look? I'm not averse to going out-of-country (lol.. making small batch chocolate in Paris would be amazing, of course! ), but just wondering if anyone might have some advice?

You could come down to Guatemala and spend a couple of weeks at my shop...
