You can order either the Santha or Ultra on this website through John. They are shipped from the manufacturer and I believe that both ship world wide.

Hi, I ordered both my Ultra and my Santha here and received the latter just 4 days after.... in Manila! Yes both them ship worldwide, do mention the voltage in your country; if you ask me and after having refined/conched several batches with both, Santha wins hands down.

First the cover, in the Ultra you must close it to run the drum ; when im tempering i find useful to leave the santha open and run it briefly without the nut just to mix the mass and avoid it cooling, i can't do that with the Ultra, actually you need considerable extra space to uncover the machine. Second, the black dust coming from the fan below in the Ultra is just nauseating, and i am convinced that some rubber off flavor stuck in my batch the first time i conched with it. I have read in the board that the belts are one of the first things to go in both machines so i keep my fingers crossed knowing i will have to go thru that sooner or later. It's just my opinion, but the Santha seems to me also more sturdy and the drum and rollers easier to handle; and as i said i got it in just 4 days here, as opposed to the almost 4 months i had to wait for the Ultra. Actually i ordered my Santha out of impatience. My next quest is to go for bigger batches, up to 20/30lbs, and i would greatly appreciate any suggestion.

It's so hard to make chocolate in New Zealand. I'm about to take a bit of a risk setting it all up. There is only one other that makes chocolate from the bean and that's Whittakers Chocolate. So finding help is hard.
Now, I'm very lucky and found a Santha Classic Titling Wet Grinder 20lt in New Zealand that has only been used for about 3 weeks. It's as good as new for about the same price it would cost me to import one. I have not paid for it yet, its always hard when you have never used one before.
Now I'm on the hunt for a winnower, but looks like I'll have to make one.

By the way... Cadbury's also makes chocolate from bean and donovans from liquor. I do not (YET!) own a Santha but aspire to get one, I have used coffee grinder and food processor. Would you mind telling me where you found your Santha (Trademe?).

Are you in New Zealand ChocolateFish? I got the wet grinder from Commercial Catering Equipment Limited. He stills has a 40lt Santha thats 3 phase. Don't let him try rip you .

Hi Chocolate fish - You do come across them occasionally on trade me - I picked one up a month ago or John sells them and they ship reasonably quick. Good to see some more chocolate makers in NZ

Do you two have your own chocolate shops?. May I ask where abouts?.
No sorry chocolatefish he only had 2 big ones. My 20lt cost me 1900nz all up!. (one big risk)
On my search for one I saw that a couple of small ones had sold on trademe for only about $200nz. But had missed out.
Setting everything up to make chocolate is a lot work. My next step is making a winnower that starts tomorrow. Can't wait.

May I ask you what beans you are using and where you are getting your cocoa butter?

I have tried a few from John and am currently awaiting some Madagascar, Dominican Republic and Venezuelan also from John. Cocoa butter I am getting through Hawkins Watts. Happy to help if I can. This forum and John Nancy have been instrumental in getting me started, the wealth of knowledge and peoples willingness to share information is amazing. Happy chocolate making!
