Hi,
I have been making small batches of chocolate for a while (20-75 x 70g bars) and would now like to upscale, initially to 150 bars. The moulds I use have 3 bars to one mold, and each mold is a little smaller than an A4 sheet of paper.
I have until now been setting the chocolate in bar molds in a domestic fridge.
Can anyone advise how I could set 150 bars in one go? It will be only be possible to set this amount in the same fridge if I get custom shelving built.
Does anyone know if there is special equipment for this, or a technique to keeping lots of molds flat whilst the chocolate sets?

I'm sure there are better ideas than this but what about a vertical bookcase type structure so the mould can sit above each other. Use two metal rods to make the shelves rather than wood (to allow circulation under the mould) and allow sufficient space between shelves to let air flow above the moulds. Then point a portable air-conditioner or fan at the shelf and away you go.
