Hello,
I produce small-batch limited-edition chocolates in collaboration with contemporary artists (I think of it as an artist residency with chocolate), and while I do temper my small batches by hand in my kitchen via double broiler (this has not proven ideal, but it does do the job...), I have neither the space or finances to grind, roast and winnow in my small apartment. I am looking for cacao mass suppliers as I am now quite limited with my options and would like to have a broad range of varieties available for creating my own blends of mass regardless of my lake of resources in-house.
I only consider fair-trade organic sources, and don't wan't to be limited to generic or blank origins from larger suppliers, etc.

itty bitty volume of fair trade, organic, and needs to be specialty origin? at least your not asking for much

Thank you for that response, I appreciate your sarcasm ;)...but in all fairness, perhaps someone out there might be able to make a general recommendation from which I can, at the least, get access to quality cacao mass in the 5-10 LBS range.

I don't know of anyone that sells cacao mass but us or most people here could make it for you. Send us a private message with what you are looking for and we might be able to help you out.

I'm just a hobby chocolate maker, with no FDA Health Department certificates or anything so I would not want to offer to sell to a commercial enterprize. However, if I did sell my bulk product, it might cost more than you would expect. (worth every penny though My percentages average about 80-83% cacao and cacao butter and 17% organic vegan sugar. (Florida Crystals) The sugar is $.60 lb. The beans and butter cost (usually organic and/or fairtrade) between $9 and $12 per pound. I lose some bean weight when I roast, crack and winnow, but I gain weight when I add the sugar so I figure my chocolate costs me an average of $10lb just in ingredients. These are just rough estimates, maybe someday someone will modify the chocolate formulater to include material costs and weight loss etc.... I would not sell for less than $50-$70lb bulk because of overhead like equipment, electricty and labor. And even at $70lb my labor would be way cheap. Compare that to a chocolate which is 30% or more sugar, or even 80% like I expect some of the brands are and you can see how they can sell for less and still make more money. Is this the sort of price you are looking to pay? Does anyone else have anything to add? Now that I think about it, I'd love to know what other folks consider their bulk chocolate to be worth...... peace, Robert
