Hi,
I am a newbie when it comes to producing in my own home. I am thinking to get a used/modified Santha Grinder tabletop. From what I understand from this extremely helpful forum, the Santha will allow me to turn my nibs into mass. If that is so, what is the role of a Champion Juicer? Which one is more versatile/helpful in my small home-based production? At this point, I am happy taking it from nib-to-bar, rather than bean-to-bar, so winnowing/cracking is not an issue for me...not yet.
For those in the North East/NYC area, I am actively searching for both a refurbished/modified Rev1-2 tempering machine and/or a used/modified Santha or comparable.

Welcome aboard, Josh! Having used the tabletop Santha (Spectra 10) and Cocoatown Inno, I would recommend the latter. It's design is more efficient, the drum is not as prone to leaking/seizing, and it's easier to clean.
The chocolate we make is very well received and I've never even seen a Champion Juicer. Those that do use them like the fact that they remove husk remnants left by poor winnowing and pre-grind the nibs, reducing the workload on the grinder. Others warn that the Champion produces substantial losses and at times overheats, burning the nibs as it grinds them into liquor. I chose to spend my time building a DIY winnower rather than investing in the Champion Juicer and have been quite happy with the decision. Good luck!
