I have an ACMC and a big old FBM but need something in the middle. A temperer that will take 20 to 30kg at a time and, crucially, can have a doser attached. All I make is bars and hand-ladling is getting boring. Plus I am giving away chocolate when the bars are overweight. The FBM is OK but too big - I dont need that capacity. Any suggestions? I use the Savage 50lb tempering melter with metered depositing pump. It's very accurate and easy to operate. It does require compressed air, cold water and drainage connections. I found mine used for about 1/2 of the cost of a new one at the Retail Confectioners' Association website classifieds.
