Okay... Since I am just starting out with chocolate and trying to find things to help me start up a small chocolate shop. Tempering has always caused me a lot of trouble, I can never get it right. I am considering buying a tempering machine (the Chocovision Rev1 any reviews??), but while viewing the instruction video I came across a term seed chocolate. My concern (after doing some internet research) is that you would have to buy some tempered chocolate from another brand or is it possible to make your own seed chocolate or can the Chocovison fully temper chocolate automatically with untempered melted chocolate? Thanks appreciate any answers from fellow chocolate makers.

The Rev1 will NOT temper from melted, untempered chocolate. With that said, it's quite easy to table some chocolate and have some tempered for seed. I quickly learned that the Rev1's capacity is just too little -- 1.5 lbs of chocolate goes very quickly when you're molding bars.
My suggestion is that you learn and perfect the slabbing or tabling method, which is IMO a necessity anyway. That way you will always have 'seed' chocolate on hand.

I use the rev1 to temper with good results. Yes, small batches but for the money it works.

In my opinion, tabling is unneccessary and too messy.
A big bowl and a cold water bath keeps the entire mess in... well... a single bowl, with just a single spatula, and it works faster than a marble slab. WAAAAY faster.
Oh.... and getting a drop or two of water in your chocolate won't sieze it. It will help make it thicker (which is a great trick to know when you need to thicken chocolate quickly), but if you handle it right, you'll be just fine.
I've put as much as a few teaspoons of water in my chocolate on occasion to get it to thicken quickly. It still tempers just fine, but, like I said, is very thick, and good for some applications.
