Hi I'm new to the art of chocolate. I find some of my chocolates come out nice and glossy and some don't. This can happen in the same batch. I've clean my moulds with cotton wool. Any suggestions? Regards Sue

could be lots of reasons, most likely of which are: 1) your tempering work needs improvement 2) your moulds may not be clean 3) your moulds may be scuffed 4) your cooling may not be sufficient 5) if your chocolates are filled, your filling material may not be compatible with the chocolate
