Hi! I'm pretty new in this forum. This is my first post.
I've been thinking about to create a little chocolate factory, using the methodology of John, that he puts in his website.
but... i'm wondering, Do I need some AC for that factory? 'cause in the country where I live, the environmental conditions are around 30ÂșC of temperature and 80% of relative humidity.
What these conditions may affect my final product?
I hope you can help me!

For any chocolate operation, you need climate control.
Ideal conditions are ~20C and under 55% RH. Anything above 60% will give you problems and 30C is way too high.

Welcome, I'd also suggest you start small, just make few kilos at a time, learn what works for you and how to do things the easiest and best way for your own situation. That way when you make larger batches, or factory, you will know how to do it best. robert
