I can't be sure... but I think that they flavor of my nibs changes after some time (~ a week) off the roast. Maybe it is just my improving tongue detecting new flavor I had overlooked before, but has anyone else noticed a developing flavor of nibs after roasting?

I have heard some members of the forum "age" their chocolate. Sorry, but I don't know any more than that

I'm sure they do. I roast coffee and the flavor develops several days out of the roast. Granted you don't roast cacao as aggressively as coffee, but it's still a very chemically complex food that goes through a lot of changes during the roast.

Oh, absolutely they both develop and then degrade in flavor. It is one of the primary reasons I sell raw nibs - the flavor degrades on the roasted beans too much and goes stale. As Barrett points out - just like coffee. Although I have generally found the window a bit larger.

In my opinion coffee peaks at day 3 then declines thereafter. 7 day old coffee to my palate is stale. Any opinions on the shelf life of roasted cocoa?
