What do you consider to be "commercial Scale"?
How much chocolate do you need to make per 24 hour period of time?

I am also looking for a grinder. I heard a nixtamal grinder works. Here's my post under chocolate business category " Hi all,
I am brainstorming on ways to grind nibs to produce larger quantities of liquor prior to putting it in the santha. The champion juicer works well for small batches, but if I want to scale-up what type of machinery is out there that might serve the same function, but deliver larger quantities while staying within a reasonable price range? I guess larger quantities is 20-40 lbs.
