We've had great success tempering with Chocovision tempering machines. Although lately everything has been coming out with streaks. I'm guessing this is due to the heat now being in the high 70s and the humidity being 52% and higher. What's the best way to fix this? We're trying to avoid putting in an air conditioner. Could fans blowing over the cooling molds work?

Streaks can be caused by lack of constant and even stirring and/or insufficient cooling. All other things being equal, if your cooling temperature is now warmer, I'd say that is the culprit. Try some fans, and if that still doesn't work, you'll have no other option but to try A/C.

You should get the air conditioner. They take care of the humidity and temperature. Air conditioners remove moisture from the air as they cool. The fans will only move the warm/moist air over the molds. We built a temperature controlled room in our factory space to deal with the heat (it is a low humidity environment). We looked into cooling cabinets and tunnels- but the budget wasn't there for that. I think that either way heat and humidity will make it difficult to mold bars- and I say mold bars because the chocolate can be in temper- and the bars may seem like in the middle they are tempered. But streaks on the back and bloom on the front are cooling issues. If you use an air conditioner make sure that it is strong enough to get the room cold-we have it between 50-65 degrees depending on night/day and production schedule.
