Hi, we would like to make some truffles for our annual St Patricks family gathering..... We make our own bean/bar chocolate, and have done a few truffle recipes including Brads Orange..... Now we need some ideas for making an Irish Cream kinda creation..... any suggestions are welcomed:) robert

Interesting, I just today made a Bailey's ganache. Very simple. 2 parts 60% chocolate, 1 part hot Bailey's, 1/2 tsp vanilla extract (the higher the quality the better) mixed with the Bailey's and 2-3cc invert sugar. Used both white and dark chocolate shells, actually liked the white better, gave off a more "Irish Cream" vibe.

Thanks, that sounds like what I am looking for. Question: You say "2 parts chocolate 1 part Bailey's"........ then the other ingredients are in specific units..... What quantity is one of your parts?
Regarding the vanilla, I have some that I am making from some beans I bought from the Organic Vanilla Bean Company, but it is still a couple of months from being ready.....

Robert,
For this particular batch I used 300 grams chocolate to 150 grams Bailey's. About 5 grams of vanilla extract. This was enough to fill 3 28-heart molds.
For xmas '07 I gave my mom and sisters a big liter bottle of homemade vanilla extract. From that batch I kept 3 more for myself. Each had 75 vanilla pods! Needless to say it's de-li-cious. Funny how many of us seem to embark on similar projects.
