I was just reading about lactose intolerance and learned that lactose is a disaccharide composed of galactose and glucose.
Is galactose powder available? And would it produce a creamy texture similar to milk chocolate to a non-lactose (soy, goat) milk chocolate?
Or more simply, does a lactose free powdered cow milk exist?

Galactose was thought to be the next, greatest sweetener to replace sucrose. D-galactose (the dextro-rotarary isomer) was found to be an *incredibly* effective laxative the same year it was originally launched in a chocolate product (i won't say which company launched it, but it's a big one..). It's now used in a laxative in the EU, and as far as i'm aware, that's the only commercially available product that contains it available today De-lactosed milk powders are available. they're quite expensive.
