I have a Spectra 10, this works great for chocolate making but has a bearing in the centre of the granite base which leaks a little grease on occasion. And I suspect is wearing out.
Recently John has added the Ultra Grinder to the list of equipment and they put theirs together with a clamp down arrangement, so their is no bearing in the chocolate. This is an awesome idea.
My question is are there any larger scale wet grinders out there that have this clamp down arrangement? It seems more condusive to chocolate making.
Has anyone tried or used the Cosmos grinders, do they have clamp down or a bearing in the centre of the granite base? Has anyone tried them for chocolate making. John you would have considered these at some stage I would imagine, what was the verdict?
