Hi I'm brand new here and to making chocolate. I'm wondering if there is a way to make caramel (chewy or crunchy) that won't affect the shelf life of the chocolate bar? I'm hoping to keep the shelf life to a year or more. Just looking to add little pieces throughout the bar. I understand that this is due to the moisture content of the caramel. I read that by lightly coating the caramel in cocoa butter, it could help. Has anyone tried this, or know of another way?
I'm also looking to do the same with honey, maybe in a gummy form or similar.

A pure (cocoa+sugar) dark chocolate alone COULD last up to 2 years if stored properly. Adding caramel, if it is the kind made with butter, would last 6-9 months. These are estimates based on what I googled. That being said: I would strongly hesitate to eat/sell a caramel bar after a year. Too many opportunities for contaminants to enter the making process, even being extremely careful. There's a lot of "little critters" floating in the air.
