Hi everyone, I saw Chocolate Alchemy’s Ruby Chocolate recipe and i’m really keen to try it. But it’s pretty much impossible to find the particular type of cocoa beans that are suggested in the recipe. Would following the same steps with a different type of cacao produce similar results at all? Has anyone tried it?

This is made industrially VERY differently than what is suggested here. I won't go into the details as it's proprietary, but it involves a level of industrial handling and raw materials that aren't suitable for the average individual.

Thanks Sebastian, that makes sense. Might I ask how you came to know the real way to do it?
I’m vegan and i’d LOVE to try ruby chocolate but i have yet to see any vegan options. So i was trying to find ways to make my own

I was in charge of chocolate R&D for companies you'd recognize all over the world for many, many years. I suppose some of the knowledge rubbed off on me
