Hi all, I recently bought the tilting Premier refiner from DCM with the stainless steel micro batch attachment. After cleaning the machine with vegetable oil abd then warm water and soap and dehydrating it completely, I made my first batch of (white) chocolate. I noticed some dark streaks in the mixture as the machine was running, took it apart and saw some of the plastic came off of the stone wheels and the black tarry substance inside it was leaking. I contacted them for help and waiting for a response but any guesses as to why this would happen? I followed everything by the book and used the machine literally just once… I had a blue Premier wet grinder before and never had this issue with that one. ibb.co/rfQkbbG

It also coud be the product they use to glue the plastic hub to the wheel? Are the hubs secure? When you cleaned the melange, did you brush out the center of the hubs?

Thanks Chip! I saw this thread just before posting. The only thing is this is my first time with the machine, and I only made white chocolate, so i’m not sure that there was any opportunity for (dark) chocolate to build up… I think it does look like glue. Somehow those plastics seem to have loosed and released the glue that was holding them together… i did try to clean it thoroughly but there’s no getting rid of all that goop and i’m assuming those plastics need to be suspended in place for the machine to work optimally.. I checked my other units and they have these plastics firmly suspended in place.

You can easily get a food grade epoxy and set those hubs back in. If you can safely do it, remove them, clean them and the stone, and the use the epoxy to put them back in. Hope this helps.

Thanks Chip! I’m gonna try this. I’m not very handy with things but fingers crossed. Just hoping i use the right amount of epoxy and nothing gets mixed into my chocolate again 🤢
