We have run into a strange problem that I'm hoping you all can help figure out!
We have been using silicone molds to make milk chocolate pops successfully. But today we tried making dark chocolate pops. They came out nicely except that nearly all of them have one large patch of blooming on the surface. They are nice and shiny except for the large patch of blooming.
There's no consistency in terms of which side the blooming happens on. It's random.
We can't figure what the problem is. Any ideas and possible solutions would be much appreciated!
I should note that the molds were washed thoroughly and then dried in the oven beforehand, so it seems like there shouldn't be any contamination on the inner mold surface.

Hello! Can you provide more information on your tempering and cooling processes? From these photos, my first guess would be a cooling issue. Can you also post a photo of your molds?

We raised the chocolate to 50C and then added seed chocolate and lowered to 31C and then poured into the mold. The room has a/c and a dehumidifier. Are these cooled completely at room temperature or do they go into a fridge or cooling cabinet?
My guess is that the bloom is happening on the side where the molds are touching that center piece of wood as the wood is acting as insulation and the heat isn't able to escape from that spot.
Can these molds stand on their own or do they need something in the middle to hold them up? If they can stand on their own, I would suggest placing them on something flat and popping them in the fridge for a few minutes. If they can't stand on their own, I'd replace the wood with something that lets air flow around them and pop them in the fridge for a few minutes.

They're just cooled at room temp. The molds are a little wobbly but maybe can stand on their own. We're going to try doing that, as well as popping them in the fridge for a few minutes. Thanks for these suggestions! I'll post a follow up after we try these things.
