I recently bought some cocoa butter chunks and feel like I can’t use them because they smell super burnt. Is that a sign that it’s rancid or something? Or just poorly manufactured?

If it smells burnt it probably is. Possibly too much heat applied during extraction.

If it's burnt, they'd have to have extracted it with some crazy high heat! Cocoa butter's smoke point is near 450F. Where'd you get this cocoa butter?
