Hello community,
I've been quite a long time with the idea to start a small-batched chocolate company. I've taken several chocolates trainings so far but is still unclear one point about the small scale chocolate business.
I see that many chocolate makers buy the chocolate from big manufacturers such as Callebaut, Valrhona, etc, however, I see this alternative quite obscure without the traceability of the cacao beans. Moreover the prices for the kg are quite expensive to sell affordable chocolate bars below an acceptable price.
Do you think is possible to find affordable, organic and traceable chocolate in bulk? or do you resort to buy directly the beans to make your own bean-to-bar chocolate?

I don't have a business myself, I am a hobbyist that likes to do my own bean to bar chocolate for my own use and gratification, but it sounds like you need to figure out what you want to produce. Those who buy mass produced chocolate are generally more likely chocolatiers rather than chocolate makers. They are using already made chocolate to make candies, bonbons, desserts, and such. A chocolate maker is generally making their own chocolate. This can be done bean to bar, or purchase nibs or liquor that are partially processed into chocolate. If quality and traceability are important to you, then you should probably consider doing chocolate making. I can't speak directly about cost since I am not a commercial/business operation.

Hello! This website and forum are mostly focused on making chocolate from the bean, so that's what we're going to most knowledgeable about. My guess is that none of us are 'resorting' to making bean-to-bar chocolate due to not being able to find affordable bulk chocolate. That being said, tons of chocolatiers buy bulk chocolate from the companies you mention and are able to make and sell products for a price they're happy with. What do you consider an affordable/acceptable price? Doing a quick search for traceability info for those companies (and Guittard), it looks like they all provide some info, with Guittard and Valrhona being more open than Callebaut. It is possible that you may be able to find better info on any of them with a little more digging. To directly answer your question about if it's possible to find affordable, organic, and traceable chocolate in bulk, my answer is yes--but that depends entirely on what you consider affordable.
