I bought a few bags of nibs and have 1 left. It is a "Uganda Semuliki Forest Direct Trade 2020"
When I compare it to the nibs from my tree these are much lighter in color some almost look white. When I look at pictures from the retail shop it looks like some of the other beans.
Both these nibs and the cocoa butter I purchased in May of 2021

While cocoa beans can last a pretty long time, nibs (especially roasted nibs) will lose flavor relatively quickly. I've not tested this myself, but another chocolate maker I spoke with did and said that to get the best flavor, roasted nibs should be used within a month of roasting and withing a week of winnowing.
That being said, my guess is that there's nothing unsafe about them. You could try making them into chocolate and see how it tastes. It probably won't be the best, but it'll probably be ok.

Note that if that whiteness is mold, just throw them away.
