Greetings, chocolate explorers. I'm going to be experimenting soon with coconut cream as a replacement for heavy cream in ganache to make it vegan. Has anyone here done this? I'm hoping that their similar fat to water ratio will make the replacement possible. Ultimately, I'd like a vegan ganache I can temper, so I don't want to stray too far from a classic ganache of cream, aromatics, invert sugar, chocolate, and liqueur.
