Is anybody using a smaller wet grinder? I'd be interested to know if you are able to make smaller batch sizes.

How small are you looking to go, I do 400 gram test batches of choc in my Spectra 10 which work just fine....infact the grind time is much reduced over a larger batch. I can't see any smaller being much use since that is getting to the limit of an amount easy to temper and mould.

400 grams would be a good size. I've been doing some batches that are just over 1 kg, but it seems I lose about ~100 grams in the Santha due to its large size.

Yeah, I exprerience about the same losses (50-100g) but I bought a whole bunch of different spatulas to find the best for scraping and on a good day I can cut the loss to 45g - my daughter tackles the rest with her fingers.

Yeah, I haven't been to aggressive at getting it all out.. Maybe I'll grab another spatula or two and give it a go.. I actually picked up my first spoon spatula because of the chocolate making But it's a larger one, I saw they have smaller pastry ones..

Regarding the spatulas - I bought a set of silicone spatulas with stainless handles and am very happy with them. Amazon has them: Pinzon 8-Piece Silicon Spatula Set. Expensive at $40 for the set but lasting - and not so bad compared with buying one piece at a time. The canister is good quality too. I got a wood handled spatula from one of the high-price stores and find that the wood handle is now discolored and mangy looking even though I pull the parts apart before dishwashing them. The stainless is the way to go in my book.
