So, I want to toss this out. I recommend a couple of different ways of roasting. You can do it in a over, in some fancy modified coffee roasters, pan roast them or roast them in a drum like coffee. I personally roast (for myself and in the Kits I offer) in a drum roaster that I built myself. You can see it here . It was not that difficult to do. Is there interest in going through the steps of builting your own 2-3lb cocoa drum roaster?

Dear John, I have to say that I am interested in just about everything right now. That sure looks like a great setup, and it has got to be easier and allow for a much more even roast than the oven. I am not mechanically inclined, but I imagine that if you were to give us step by step instructions and an idea of where we can buy a lot of this used (ebay?) then that might help. I don't want to cut into your business though. A person has gotta make some money. Sincerely, Alan

Has anyone tried sun roasting? I have found that it works! It is a slow process, but the best roasters are the disk type instead of the sun ovens...I need to make drum though
