John your "12th Night..." is interesting. Question: you say "I then started the Melanger running and added the sugar. Brought the whole mass to 155 F." How did you heat the mass?
You dropped that on us about the aluminum centers for the melanger wheels. Gonna tell us more - like offer them for sale? Do you lube the shafts? I have been using a drop of mineral oil but am open to suggestion on that. Have you considered urethane instead of nylon, or different nylons? Generally cracking indicates that a plasticizer has been driven out of the plastic. An unalloyed (pure) plastic might have a longer life and work nicely in higher temperatures.
Finally - I wonder if there aren't some (silicone) sealant materials that would have better temperature capabilities - for sealing the side and bottom of the melanger drum. Temperature seems to be a core problem for us. I know it concerns me that my oven can only be set at a minimum of 170F. I would like a little room there as well as during melanging.
Just some thoughts.

OK, my bait worked I have held off offering the aluminum centers and caps, but probably will. If you really want a set, drop me a line via email and we can do it. They are pricey. Around $125 for the centers and $80 for the caps. Even I have sticker shock when I write that. As for heating, I just heated in the oven. Just like roasting beans, the ambient temperature isn't the temperature of what you put in. You have to have some gradient and the steeper the gradient, the faster things heat. Meaning I set the oven to 200 F and put the granite bowl in with the chocolate (remember also, my bowl has been reinforced with JB weld). When the chocolate reached 150 F I pulled it out. I have approached Spectra (formally known as Santha) about metal parts. We will see. If you get some of the aluminum pieces, you could pretty simply heat the contents with a suspended heat lamp. At least in theory. I have not played a lot with that. Tell me all - I want to offer what people want. Do you all want these metal parts at these prices?
