I just ran across a box (6#) of raw cocoa beans, in my closet. They are about a year old. Still packaged in the, unopened, shipping box and Chocolate Alchemy zip-lock bag. Could these beans still be viable for roasting? or Should I compost them? I am curious if anyone else has had a "good" experience with roasting forgotten beans? Thanks

They're almost certainly fine. Since cacao is dried, it has a very long shelf life. I once worked with the same beans for almost 3 years. There was only a slight change in flavor in that time.

I've even heard anecdotes that the chocolate tasted *better* when the beans were two years old compared to the fresh beans.
