Hey all, am running into a problem today with a sloppy batch that is splashing the cover and the table. I have never had this problem. The mix is 400 nibs, 200 butter. Any ideas? Thanks

Mitch30, Off the top of my head it may be that your mixture is too "liquid." I notice there is no sugar in your mix, so maybe that is a reason? Too much tension on the stones? I've really never encountered this before. Just trying to think outside the box here.

It has to be because I just added another 200 Nibs, and it absorbed them without making a differential sound. I'll know for sure in 20 minutes or so if there's no chocolate on the table. I have never added sugar by this point in the process, 2 1/2 hours in. I also screwed up the ratio of Nibs to Butter, wasn't thinking that out... Normally I'm at 600 Nibs / 100 Butter / 300 Sugar, but am doing this batch with no sweetener.

I think Chip's got the right answer. It's really liquid so it's more easily flung about. Reducing the tension or increasing the batch size may help. When I make 100% chocolates in my stone grinders, I try to make the batches really fill the grinder to avoid too much spray. I also put the lid on after the first little while, but I see you have the steel stone holder, so that may not be an option.

Yeah, it was still spitting after I added the extra 200 of Nibs, so I'll just chalk it up to I used too much Butter. I'll just remember no more than 100. I scrapped it 5 hours earlier than planned, so I'll find out if the recipe even worked at all. It is also the first time I have done less than 1K.

It would splash even without any added cocoa butter. 100% cacao is very liquid-y.

Interesting! My 100% chocolate always splashes, but I'm not sure at what point it starts, so maybe it's sometime longer than 5 hours.

Ok, well I have my definitive answer. I'm running a batch with 600 Nibs and only 75 Butter, no splashing at all, not a speck on the metal lid after 3 hours.
Looking back to the problem to begin with, I have no idea why I used 200 Butter. I have never seen anybody do that in a video. I guess it was just a learning experience, and that's that.

I had this same problem last night. I think you were right Chip when you said "too much tension on the stones". I had to turn off the melanger, scrap down the sides and loosen the tension. No splashing at all now. Thanks for sharing.
