Edit: Solved, High emissivity mode is best Hi folks, I tried to look around a bit and I am hoping to get some feedback on how to use my new IR therometer.
The topic has been mentioned before, but I never quite managed to extract the knowledge of what mode would be most suited Do I need to buy a probe to check against or is there an estimation what would work?

I've always just used the cheap IR thermometers which don't have different settings. Do the different settings return different temperatures when you take a reading from chocolate? My guess is that the first one would be fine.

They do, the range is close to ±1C difference, so actually quite a bit!

Unless someone knows for sure, I'd check it with a probe thermometer and use whichever setting most closely matches that.

After testing against my probe I have to agree, high emission mode is closest!
