Hey I'm new here so after some help if possible. I have bought a chocolate refiner machine and am attempting to make milk chocolate. It might sound silly but no matter what cocoa powder I use the chocolate always comes out dark. How do I get this to be milk chocolate? Also I'm not sure how to temper my chocolate, does anyone have any advice? Thank you

As long as you're adding milk, it's milk chocolate.
