Hi! I am from CostaRica and new to this world of chocolate making, recently bought some cacao beans grown, fermented and dried in the Caribbean slope jungle, they are certified organic mix of trinitario and creole pods, 4.5 day ferment, dried on December 2020, aged for 4 months now. I haven’t roasted a test batch (probably will do that today) eaten right away they taste real good but wanted to show you guys some pics to see what you have to say about their appearance.
