Hi, I was wondering if someone could give me some pointers as to what is causing this problem (even if you tell me nothing will fix it). We use this mold every year to make chocolate bunnies in our chocolate shop (https://www.chocolat-chocolat.com/home/chocolate-molds/chocolate-molds-easter/p17740941.html). They are awfully cute and we get great reactions to them so I'd hate to change them, but the ears keep setting before everything else and then they crack and break off inside of the mold. We only have success with about 1/4th of them coming out intact.
We make them solid, not hollow. We do both halves of the bunny separately, unmold them, and then glue them together. We do this for the reason that when we try to sandwich the molds together, the halves don't quite reach each other enough to stick together on their own. Also, we're using Valrhona chocolate that we temper in a Gami T260 machine so the chocolate itself is probably not an issue. Has anyone else encountered this with molded items and what can we do to avoid it? Or do we need to buy a different style of mold? Many of the bunny molds I've found all have long thin ears so I know we can't be the only ones having this issue.
Any suggestions?

No, you are not the only one having this issue. I have had more broken ears than I care to mention. I don't have a great handle on it, but it seems to be pointing in the direction of proper vibration after pouring and then not cooling too rapidly. At least right now that seems to be the answer. Maybe Ben has more experience with ears. But really, Ben is kinda' our "guru" here and has a LOT of experience.
