Hi friends,
Quick question for you. I am doing small batch roasting (under 10 lb) of pre-winowed nibs. Unfortunately the borrowed food prep space I am working in does not allow for a conventional oven, and the small, portable toaster oven I purchased lacks the necessary capacity to be practical. I need your help! What relatively portable device will roast between 3 and, say, 10 or 20 lbs of *pre-winowed nibs* (not larger beans!) So that I can get the job done and then take the unit home with me?

We generally roast the beans before they are cracked and winnowed so it seems odd you are planning to roast nibs. The Behmor is quite small so it would fit your needs regarding portability. I'm not sure how you'd go roasting nibs in it as the mesh might not be fine enough to prevent smaller nibs from falling out of the drum.

Yes, this is a concern, I'm definitely worried that nibs will begin to litter the bottom of the roaster. Note that John sells pre-winnowed nibs and this is what I'm working with as I'm not in a position yet to purchase a winnower.

OK, that's understandable. If you're buying the nibs from John, why not just buy the roasted nibs? The roast will be spot on and you can initially concentrate on the refining / tempering / molding processes. If you're interested in getting into the roasting, I'd honestly recommend doing that with the whole beans and not roasting nibs. As you move forward you'll end up roasting whole beans anyway, so might as well plan to start with that. If cost of purchasing the winnower is the only thing holding you back it's worth noting that you can build your own winnower with minimal cash outlay. You only need to purchase some PVC pipes, a bucket and some plywood. From memory my winnower cost me around $30 in parts.
