Hi! I’ve been seeing a lot of chocolate with cocoa powder added, as well as cocoa mass, cocoa butter and sugar... what is the purpose of adding cocoa powder? Does it give it any extra flavour or texture?

Hi katfilkin, I have never used any added cocoa powder to my actual chocolate. I have used some powder to "dust" my chocolates, but that's about it. My ingredieints:
Dark: cocoa liquor, cocoa butter, sugar, powdered vanilla Milke: cocoa liquor, cocoa butter, sugar, whole milk powder, powdered vanilla
I don't use any artificial sweeteners, lecithin or any other chemicals or compounds. I do add organic peanut butter or peanuts from time to time to make pb chocolate.

It can probably be added for various reasons, including flavor, costs, process, etc. Can you provide some examples of the chocolates you're talking about?
