Hi absolute noob question here.
After i crush and extract the cocoa butter from the cacao nibs, there remains whatever is left of the nibs which i am led to believe is made into cocoa powder. What am i to do with this powder? I assume i dont use it in my chocolate making process. I became confused when reading that many recipes call for, lets say, 20% nibs and 20% cocoa butter in a milk chocolate recipe. Does that mean that i take the cocoa butter i extracted and then a whole new batch of nibs and not use whatever was not cocoa butter from the previously pressed nibs? Thanks

If I understand your question, yes! You would use nibs (with the cocoa butter still in them AND additional cocoa butter along with the other ingredients your recipe calls for. (Note that some dark chocolate recipes may not require the extra cocoa butter as there MAY be enough in the nibs alone - usually needing about +/-35% of the recipe.)
You can purchase cocoa butter so that you don't have to press it out and ending up with leftover cocoa powder. Just make sure that you purchase FOOD GRADE Cocoa Butter! Best to get it from wherever you get your beans. There is a large market for stuff used in hand creams and cosmetics - you don't want that!
If you need to press your own cocoa butter, you can use the leftover cocoa powder in recipes calling for it - cakes, cookies, etc. (Note that this would be "regular" cocoa, not dutch processed. The difference isn't great, but the acidity/alkalinity is different and may require a change of baking powder for baking soda or vice versa to get the appropriate rise or texture.)

darrend, Just curious, what are you using to extract your cocoa butter? Also, cocoa powder is used in making cakes, cookies and other chocolate yummies.

Yes, all makes good sense. Appreciated. I am still at the setting up stage. Cocoa beans are very cheap here (Sulawesi) so i hope to do the extraction myself as cocoa butter itself is quite (relatively) expensive. I think I will buy a MKS-J03, Chip. It is mainly used for sunflower, sesame and peanut here. 3kg per hour capacity apparently.
