Hello! I’m wondering if anyone has any experience using coconut milk powder and leaving out the cocoa butter? I’m nervous to try because I don’t want to waste ingredients!! Thanks!

If you're adding more solids like coconut milk powder without adding cocoa butter, you can easily run into a situation where your chocolate is too thick to really work with, . So, yes, you could make a chocolate that is basically nibs, sugar, and coconut milk powder, but you'll need to make sure you have enough fat (the cocoa butter in the nibs). 32% cocoa butter is generally the minimum for a workable chocolate.
