Hi, How do we measure particle size in chocolate? We are using handheld micrometer but it is not accurate. It is hard for employee and train employee. They gets variation in results. How to get precious result.

A mitotoyo micrometer can be very, very accurate if used properly. It will not give you the particle size distribution, but rather the largest particle. Can you post a link to the precise micrometer you are using, and detail very specifically the method you use (ie how you use it?)

Hi, You can use Malvern mastersizer equipment for measuring particle size. It works based on diffraction principle and can be used to both refining flakes and liquid chocolate (from Conch) as well.

While that is true, a good micrometer might cost you a couple hundred dollars, while a good laser particle size analyizer may cost you a couple of hundred thousand dollars I've used both, and both are great tools - and while they do, generally speaking, similiar things (provide particle information) a laser particle analyzer gives FAR more information, and a FAR higher price tag
