I need to be able to make truffles with a longer shelf life. I have volunteered to make them for an insentive item for a fund raiser. I want to be able to make them like once a month. I know it can be done, as there are Lindt truffles on the shelf at the store. Granted these are not the perfect truffle as they have stabalizers and stuff in them, but this is what I needed to figure out.

You might want to look into asking this question at eGullet. forums.egullet.orgThis forum is devoted to making chocolate from cocoa beans, not to making chocolates, truffles, pralines, etc.
