Hi, does anyone know of the best rpm of the roasting drum? I know that it's slower than the rpm when you roasting coffee and it depends on the total amount of beans you put in the drum. With that said there should be an optimal range?

As with all variables in chocolate roasting, there's probably not a 'best' rpm for all beans and roasters. That being said, I think the rule of thumb is around 40 rpm or so. I did some tests with drum speed a while ago and found that I could speed up the roast by increasing the drum speed. I found this useful for the initial drying phase in particular.

Just to give you another reference the Behmor drum speed is either 8 rpm (normal) or 16 rpm ("fast").

Right. There's probably some drum diameter to speed ratio calculation to be considered, but I don't know what it is.

Yeah, like always a lot of things to consider but good to know where to start aiming anyway. At the moment Im looking around for a new roaster and one I'm specially interested in have 40 or 60 rpm...more research needs to be done tho...
