Here is my version that I use to run a couple of pounds of nibs through when I make chocolate once a month or so. The basic setup includes a Dust Deputy Cyclone filter and a Rigid 5hp portable vac. I am using a Crankandstein hand powered cracker. After some trial and error trying to winnow straight out of the Crankandstein, I went to using stackable sifting pans that fit onto a 5 gallon bucket. I use the 1/4 inch and 1/12 inch sizes to screen out the fines and the large pieces before using the winnower. I was not satisfied how finicky it was to get a single pass cleaning. Sitting back and thinking where my weakest point was in the system, I decided my hand feeding of the nibs was inconsistent and consequently the affect of the airflow was inconsistent. So I made a chamber to hold the nibs with some left over fittings from other projects. It has a gate to let the nibs flow and a lid to keep the system from drawing air through the chamber that could change the overall airflow as it emptied. I use a 2 step process. The contents of the 1/4 inch sifting is done with one main valve setting and then the under 1/4 is done at another setting. The Dust Deputy makes its quick and easy to see if any more tuning is needed and the vac itself stays clean.
