Hi,
is there any scientific evidence showing any improvement in the aromatic part after a certain period of rest from roasting?
For example, if I start the separation and refining just after the beans have been cooled, is there any difference from starting 24 hours after roasting?

I'm sure there is, but I've never seen it.
The only thing I can remember related to waiting after roasting is related to moisture in the bean. Alchemist John mentioned at some point that he had roasted and cooled some beans and then put them in a bucket with a lid. The next day, he went to crack and winnow them and there was condensation on the bucket lid from moisture continuing to evaporate from the beans.
On a non-flavor note, some crackers work better when the beans are not fully cooled, while the beans are still somewhat pliable. I've found that the crankandstein works better with warm, pliable beans, but that the Champion Juicer works best with fully cooled beans.

On the level of taste someone / chemical processes related to roasting someone knows if something changes?
