I just bought a bar of the newly re-packaged Terra Nostra "Intense Dark" 73% and on the label the type of beans and origins are clearly noted as well as....... the conching time(22 hours) and particle size (18 microns). This is good for us as a reference Choconutz

I have had and like that chocolate pretty well. Met the maker even.
That said, not that he is purposes misleading anyone, that information does not give you the whole story. Conching is temperature affected. And particle size is now where close to as simple as one number. It take two separate graphs to accurately discribe the size and particle distribution of a chocolate sample. Most likely that 18 micron number is the mean weighted average of the sample.
