Hi all, I've had a lot of luck using oil soluble powders to make colored cocoa butter for decorating my chocolates. I also use some gel based colorants to color my white chocolate as well. However, does anyone have any experience making pure white cocoa butter? There are no white oil soluble powders (edible) that I can find. I have just done an experiment and combined heated cocoa butter (70C) with some titanium dioxide. It is pure white but I'm afraid of it settling out as it cools. Time will tell.

I have not done a lot of research on titanium dioxide but, while it appears safe to ingest, it is a possible carcinogen when inhaled. Use precaution in handling it; wear a mask and wash your hands!

Just as I had expected, the titanium dioxide separated out of the cocoa butter and actually made it quite grainy. Into the garbage with it. The rest of the titanium dioxide went in the garbage as well. I did have a bottle of titanium dioxide gel coloring, but that was even a worse disaster! LOL
So, still experimenting.

Looks like the industry relies on TO2 pretty exclusively. Not much help there. I haven't made any yet, but is white chocolate (even made with heavy cream powder) too off-white? For your other colors, what have you been doing? Amounts, ingredients? I've been thinking about trying this...

No real formula so to speak. I use cocoa butter and use a hand blender to mix in the TO2 until white. I am thinking for white I may just go with the Merckens candy coating super white. . I use it so infrequently that it won't be a big impact on my chocolates. Like eyes for Easter lambs, etc.

I remember seeing a YouTube video a little while back about molding Easter Bunnies. I think it was from Global Sugar Art. Anyway, I think it was stated that yellow was the traditional color for the "whites" in the bunny eyes! Maybe that would be an option.
