Syntra West or Ter Groene Poorte of Bruges, Belgium offered a chocolate making course named "Chocoladenbewerker" or "Artisanaal Vervardiger van Zoetwaren" in Flemish language. Pol Deschepper, the winner of the world chocolatemasters 2005 is one of the teachers in this school ...but I don't know if this school is classified as one of the world's best. Just an idea...
How about the French Pastry School of Chicago? I have seen their lab and it is interesting...the guest chef's courses sounds also good.

Just to be clear about my short response...one of the problems with chocolate terminology in English, perhaps in some other languages too, is that when one says "Chocolate maker," it is not possible without more information to know if that person means: "someone who makes chocolate from cacao" or "someone who blends pre-made chocolate" or " someone who makes bonbons, truffles, etc."
Because of this, and because the majority of the public doesn't really have any clue that one who does one doesn't also usually do the others, and because this site is devoted to actually making chocolate from cacao, I figured it would be good to find out what specifically the questioner wanted to learn.
As far as I know, there is no in-depth class or school devoted to making chocolate from cacao anywhere in the world. It would be interesting to find out that I'm wrong.

I attended a 4-day class on chocolate basics at the Notter School in Florida, and found it to be extremely helpful. They taught the overall science and basics of tempering, as well a lot of techniques for working with chocolate (you actually create 3 chocolate sculptures in the class). They also offer classes such as truffle making and chocolate airbrushing. The 4-day class was $820, and worth every penny.
