I'm looking for unfermented or nonfermented raw cacao beans. Anyone knows where to buy them? Please help!

Oh, btw, organic ones, too. But if there is no organic ones, non-organic unfermented or nonfermented raw cacao beans will suffice, too. Thank you!

Hi Bing Did you ever manage to find a source of unfermented organic beans?

Commercially speaking both Haitian and Indonesian beans tilt towards the underfermernted side of things.

Thanks Sebastian! Can you give me any leads on what underfermented means? (eg. 50% sugar consumption, no fermentation at all, no aeration, etc)

Typically scored via bean cut test, and the a visual assessment of internal bean color. Pink/Purple colors indicate low/no fermentation. A high % of purple beans via cut test indicates degree (or lack of) fermentation.
