Since the timer for the Santha melangeur is still under works, would it be wise or unwise to just strap on a regular on/off timer between the wall outlet and the santha plug?
It seems like a reasonable workaround, but wasn't totally sure if just cutting the power to the santha from the plug is something that may be damaging. I can't imagine it to be, but there are a lot of bad engineers out there...

Modena, a lot of the timers have low current-carrying capacity. Be sure to buy a better grade timer so you don't overload the switch - and overheat the Santha motor because of low voltage.
One timer here has a rating for "tungsten" and another for "motor". Be sure you have enough capacity for the motor.
My timers can be set for periods of on and off. I wonder if there is any reason to cycle the Santha. Cant think of any but then maybe...

I have a question:
Why would a person want to shut the Santha off automatically? This will only cause the chocolate inside to cool and solidify and cause the user no end of grief in trying to get it out, when the ramifications of leaving the thing run for a few more hours is only smoother chocolate?
Furthermore, unless it's working away in the basement or a garage, who out there can forget the Santha is actually running? The noise is reminder enough, and in fact we count the hours around here until it's time to turn it off!
...just an observation.
