I’ve tried it before. You have to be very careful because the PID will switch the heating elements either fully on or off to get the thermocouple or the thermistor to the desired temperature. Thus, there’s some risk that chocolate at the edge of the bowl will get too hot if you’re not stirring quickly and if you’re using the cooker to directly heat the chocolate. You could otherwise use the controller to heat a water bath, and then put a bowl of chocolate in the bath. The heat will be more uniform and the bath will lessen the temperature fluctuations. Of course, you also have to be careful here because, well...water.
